Chia pudding doesn’t need hours & hours of preparation if you start with a chia gel. It is always healthier and even more appetizing to add fruit powders for colouring.

Purple Coconut Chia Parfait
2 tbsp chia seeds
4 tbsp water
1/2 cup coconut yoghurt
1/2 tbsp maple syrup
1 tbsp purple fruit powder
1 tsp beet powder
blackberries, blueberries
Direction
Mix chia seeds with water and stir thoroughly. Let it sit for 15 minutes. Mix chia gel with coconut yoghurt and a purple fruit powder, maple syrup and stir well. Divide and add beet powder to one half of the parfait. Layer in a jar with blackberries & blueberries.
