HEALTHY CINNAMON ROLL MUFFINS
Bananas will give these muffins an incredible ๐บ๐ผ๐ถ๐๐ ๐ฎ๐ป๐ฑ ๐ฐ๐ต๐ฒ๐๐ texture, but without compromising the very expected ๐ฐ๐ถ๐ป๐ป๐ฎ๐บ๐ผ๐ป ๐ฟ๐ผ๐น๐น ๐๐ฎ๐๐๐ฒ.

๐ฅ๐ฒ๐ฐ๐ถ๐ฝ๐ฒ for 10-12 muffins (gluten/dairy/refined sugar-free)
* 2 bananas
* 1/4 cup maple syrup
* 1/4 cup sunflower oil
* 2 eggs
* 1/3 cup plant-based milk
* 1 1/3 cup rice flour
* 2/3 cup oat flour
* 1 tsp vanilla extract
* 1 tsp baking powder
* 1/2 tsp cinnamon
For the cinnamon swirl:
* 2 tbsp coconut sugar
* 1 tbsp cinnamon
Process
Preheat oven to 180°C (350 F) and line a muffin pan with parchment liners.
In a mixing bowl, whisk all wet ingredients until combined. Add in the dry ingredients and stir with a wooden spoon. Divide the batter evenly between the muffin cups, filling each cup 1/2 way to the top. Sprinkle 1/2 tsp of the cinnamon swirl mixture and then top the muffin with the remaining batter. Sprinkle an extra dash of the cinnamon mixture on a top muffin. Bake for 20-25 minutes. Enjoy!
