How to make healthy cinnamon roll muffins


HEALTHY CINNAMON ROLL MUFFINS

Bananas will give these muffins an incredible ๐—บ๐—ผ๐—ถ๐˜€๐˜ ๐—ฎ๐—ป๐—ฑ ๐—ฐ๐—ต๐—ฒ๐˜„๐˜† texture, but without compromising the very expected ๐—ฐ๐—ถ๐—ป๐—ป๐—ฎ๐—บ๐—ผ๐—ป ๐—ฟ๐—ผ๐—น๐—น ๐˜๐—ฎ๐˜€๐˜๐—ฒ. ⁣⁣

๐—ฅ๐—ฒ๐—ฐ๐—ถ๐—ฝ๐—ฒ for 10-12 muffins (gluten/dairy/refined sugar-free)
* 2 bananas
* 1/4 cup maple syrup
* 1/4 cup sunflower oil
* 2 eggs
* 1/3 cup plant-based milk
* 1 1/3 cup rice flour
* 2/3 cup oat flour
* 1 tsp vanilla extract
* 1 tsp baking powder
* 1/2 tsp cinnamon
For the cinnamon swirl:
* 2 tbsp coconut sugar
* 1 tbsp cinnamon




Process
Preheat oven to 180°C (350 F) and line a muffin pan with parchment liners.
In a mixing bowl, whisk all wet ingredients until combined. Add in the dry ingredients and stir with a wooden spoon. Divide the batter evenly between the muffin cups, filling each cup 1/2 way to the top. Sprinkle 1/2 tsp of the cinnamon swirl mixture and then top the muffin with the remaining batter. Sprinkle an extra dash of the cinnamon mixture on a top muffin. Bake for 20-25 minutes. Enjoy!
