40g oat flour (blended oats) - can sub for plain flour

55g smooth peanut butter
2tbsp maple syrup
1/4tsp baking powder
35g dark chocolate chips
Optional:
Vanilla flavdrops - sun for 1/8tsp vanilla extract
Pinch of fine sea salt
Preheat the oven to 180 degrees Celsius fan and line a baking tray with greaseproof paper.
Mix the peanut butter, maple syrup and vanilla drops/extract if using until fully combined.
In a separate bowl, mix together the oat flour, baking powder and salt.
Add the wet mixture to the dry mixture until fully combined.
Fold in the chocolate chips and spoon the mixture onto the baking tray in six equal cookie portions. I used an ice cream scoop.
Bake for 10 minutes and allow to cool slightly before devouring!
